Fridays have always marked the end of the week, but now they’re also the perfect day to celebrate cozy, nourishing soups. Whether you’re stirring up a hearty stew, a creamy bisque, or a rustic broth, Soup Friday is your invitation to slow down, savor the season, and warm up from the inside out. Instant Pot Stuffed Pepper Soup:

If you are a fan of stuffed peppers you will love this recipe it’s like a deconstructed stuffed pepper. It’s a must have in our house. Even my picky eaters enjoy it (if they are able to pick out the peppers 🤣). My husband loves this soup because it’s a thick kind of soup with not so much juice.

I love soup recipes because they are one pot meals! Easy clean up nights!

Let’s make it-

This recipe just needs simple Ingredients that you might already have in your pantry or refrigerator.

Ground Sausage: I like to use ground breakfast or sage sausage for our stuffed peppers. If your not a fan of sausage feel free to use ground meat or ground turkey

Chicken broth: If you’re substituting your meat feel free to use beef broth instead. They both work great for this recipe.

Diced tomatoes and Tomato Sauce: Want to add some heat to your dish? Use fire roasted tomatoes instead of regular.

Diced bell peppers: The color you use is up to you. We prefer green for our soup.

Spices: You will need Black pepper, cumin, and garlic powder.

Rice: We love to use Jasmine Rice for this recipe. You can use whatever rice you have.

I love this recipe because it’s done in 3 simple steps for crazy busy nights with the kids.

  1. Saultè your meat till it’s browned.
  2. Add all other ingredients into pot. Add lid and cook for 10 min.
  3. Quick release and your ready to enjoy.

Instant Pot Stuffed Pepper Soup

Take an a classic favorite made into a yummy soup!
Prep Time 15 minutes
Cook Time 8 minutes
Total Time 23 minutes
Course Soup

Ingredients
  

  • 1 lb ground pork sausage
  • 2 cups chicken broth
  • 14.5 oz diced tomato
  • 15 oz tomato sauce
  • 3 cups diced bell peppers
  • ¼ tsp black pepper
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ cup rice

Instructions
 

  • Spray the pot of your instant pot with oil.
  • Sauté your ground sausage till browned.
  • Add all other ingredients into your pot. Put the lid on, seal the valve, and set for 10 minutes on high pressure.
  • Quick release the pressure when done.
