Easy Creamy Italian Sausage Pasta

A quick easy Pasta dinner for those busy weeknights!

Ingredients
  

  • 1 lbs Ground Italian Sausage
  • 1 lbs Penne pasta
  • 1 tbsp Olive Oil
  • ½ Yellow onion minced
  • 2 cloves Garlic minced
  • ½ tsp. Red pepper flakes optional
  • ½ tsp. Salt
  • 2 cups Heavy cream
  • 5 oz Baby spinach
  • 1 cup Shredded parmesan cheese

Instructions
 

Cook pasta:

  • Bring a large pot salted of water to a boil. Add your pasta and cook according to the package directions until al dente. Drain the pasta reserve 1/2 cup of pasta water in case your need it later to adjust the sauce.

Sauté Sausage and Veggies

  • While the pasta is cooking, heat olive oil in a large skillet over medium-heat. Add the Italian Sausage. Breaking it up with a spoon.
  • Add in you onion, garlic, red pepper flakes and salt. Cook for about 5-7 minutes. Stirring occasionally until the sausage is browned and onions are soft.
  • If there is any grease from the sausage drain it off, then return your sausage back to the skillet.

Sauce:

  • Turn the heat down to low. Pour in your heavy cream and let it come to a gentle simmer. Stirring occasionally.
  • Add in baby spinach, stirring gently. Let it cook 3-5 minutes until the spinach is wilted and mix well with the creamy sauce.
  • Add in the parmesan cheese to the skillet, stirring until melted and fully blended

Add in the pasta

  • Add the cooked penne to the skillet, tossing everything together to coat pasta evenly with the sauce. If the sauce is too thick, add a bit of the reserved pasta water, one tablespoon at a time, until it reaches your desired coconsistency.
