Homemade Italian Pasta Sauce

Ingredients
  

  • 2 28 oz Diced Tomatoes
  • 2 28 oz Tomato Puree
  • 4 oz Tomato Paste
  • ½ small Onion
  • 3 Carrots
  • 2 Celery Stalks
  • 6 cloves Garlic
  • 4 tbsp Red Wine
  • ¼ cup Olive Oil
  • ¼ cup Worcestershire Sauce
  • ¼ cup Brown Sugar
  • Parmesan/Reggiano Rinds
  • 2 tbsp Basil
  • 2 tbls Rosemary
  • 2 tbls Morajoram
  • 2 tbsp Oregano
  • 1 tbsp Thyme
  • 1 tbsp Sage
  • 2 tsp Salt Add more to taste
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions
 

  • Using a food processor, puree the onion, carrots, celery and garlic together.
  • Heat 2 tbsp of olive oil in a pan and cook the onion, carrots, celery and garlic until soft.
  • Add all ingredients to the slow cooker and stir together well. Set the slow cooker to 8 hours on low and let the sauce cook.
  • Once cooked, let it cool. If you like a smoother sauce pour the mixture into a blender and make it a consistency that suits your taste. This recipe will make about 16 cups of sauce, which makes it great to put in containers and freeze.
