This is a recipe that I came across on Facebook one night from Crazy Busy Mama. She made these delicious taco bowls on the stove. When I was watching her make hers I was thinking oh I can easily make this in the Instant Pot. It was so easy and the family loved it. This recipe is toddler approved, picky eater approved and teenager approved. What I love is how much this recipe makes that we always have some leftovers for lunch. Not only is this meal an easy one to make but also a budget friendly meal.

I just put all the items in my Safeway cart and the total was $17. A lot of the items we usually have on hand. $17 to feed my family of 7 I will take it.

What you will need:

  • Ground meat
  • Onion
  • Water
  • Taco seasoning packet
  • Rice (I love to use Jasmine Rice but you’re use whatever you like)
  • Your favorite taco toppings- cheese, lettuce, tomatoes, and salsa

Let’s make instant pot taco rice bowls!

You will start by selecting sautè on your Instant pot. Once it’s warm add your ground meat and your onion. Crumble and cook till browned.

Next you will add in your waster, rice and taco season packet. Set time to cook for 4 minutes. After the cooking time is done you will let it naturally release for 10 min.

After you let it sit you will release the leftover pressure and open your lid. Using a fork you will fluff the rice.

Now it’s time to scoop into bowls and top with your favorite taco toppings. My kids love adding Doritos to their bowl when we have them.

Equipment

  • Instant Pot

Ingredients
  

  • 1 Tbsp Oil
  • 1-2 Lbs Ground Beef
  • ½ Yellow Onion
  • 1 Packet Taco Seasoning
  • 2 Cups Rice I use Jasmine rice.
  • 2 Cups Water
  • Toppings: cheese, lettuce, tomatoes, sour cream, salsa and Doritos

Instructions
 

  • Select Sautè and heat the oil in your instant Pot. Add the ground beef and onion to the Instant Pot and cook breaking the meat into small pieces until browned.
  • Stir in water, taco season packet and rice. Lock the lid into place. Select high pressure and 4 minutes cook time.
  • When the cook time ends, let the pressure release naturally for 10 minutes and finish with a quick pressure release.
  • Fluff the rice with a fork. Scoop into bowls.
  • Garnish with your favorite taco toppings.
