Enchiladas : Easy Recipe for Busy Moms

Lazy Enchiladas in 30 minutes!

As a busy mom of 5 this recipe has become a must have in our house. Its a quick dinner on busy nights to save money by avoiding the drive thru. All you need is 3 ingredients: your favorite frozen taquitos, enchilada sauce and cheese.

Tips:

  • Easy clean up use a foil pan. If you don’t have one make sure to spray you pan well
  • Any taquitos will work and also any enchilada sauce. I like to pair beef taquitos with red sauce and chicken taquitos with green sauce. Honestly it’s all on what you like.
  • If you like a lot of sauce feel free to add more.
  • Top with your favorite topping!

Lazy Enchilada

Quick and Simple dinner recipe that the family will enjoy

Ingredients
  

  • 13  Frozen Taquitos (Corn or flour) Fill up your pan
  • 8 oz Shredded Cheese I use Colby
  • 10 oz Enchilada Sauce (Red or Green)

Instructions
 

  • Preheat oven to 400 °F
  • Spread frozen taquitos into a casserole dish. Bake for 15 minutes.
  • Remove from oven, cover in enchilada sauce and top with shredded cheese.
  • Bake for an additional 5-10 minutes till your cheese is melted.
