Stuffed Peppers: A Cozy Fall Family Favorite

These stuffed peppers are a family favorite all year long, but there’s something extra comforting about making them during the cozy fall months. They’re warm, hearty, and packed with delicious flavor, making them the perfect easy fall dinner for the whole family. Plus, we like to switch things up by using country sausage instead of traditional ground beef, which adds even more flavor to the recipe. However, if you prefer ground beef, simply swap it in for the sausage. Either way, these stuffed peppers are sure to become a family favorite! Perfect to make on a weekend when you want a cozy dinner!

What you Need to Make Stuffed Peppers:

This stuffed peppers recipe uses simple ingredients that come together to create a delicious and filling meal

  • ground country sausage
  • 1 clove garlic, minced
  • ¼ Medium onion, minced
  • garlic powder
  • cumin powder
  • salt
  • 3 large green bell peppers
  • chicken broth
  • tomato sauce
  • cooked rice
  • Olive Oil Spray
  • Cheddar cheese, Shredded

How to make:

  1. Heat oven to 400 degrees F
  2. Lightly spray olive oil spray in a medium nonstick skillet and heat on a medium heat.
  3. Add onion and garlic. Sautè for 2 minutes, add sausage, salt, garlic powder, cumin and cook meat till completely cooked through
  4. Add tomato sauce and ½ cup of chicken broth, mix well and simmer on low for about 5 minutes.
  5. Combine cooked rice and meat together.
  6. Cut the bell peppers in half lengthwise, and remove all seeds. Spoon in ⅔ cup meat mixture into each pepper half and place in 9×13 baking dish. Top each pepper with cheese.
  7. Pour the remainder of chicken broth on the bottom of the baking dish. Cover tightly with aluminum foil and bake for 45 minutes, until peppers are tender.
  8. Carefully remove the foil and serve right away
