Sweet & Chewy cookie sticks! Must try this holiday season

Today we are taking a twist on a twist on a classic chocolate chip cookie! Behold, the delightful chocolate chip cookie sticks! Some tips to make the best Cookie Sticks!

I was honestly shocked at how easy and quick this recipe was. And let’s just say they tasted amazing too! Here are some tips that I did find out from making these cookies for the first time. 

Cookie Sticks

  • The recipe calls for mini chocolate chips. I used normal size chocolate chips. It worked but they were falling out while I was rolling out the dough. I think mini chocolate chips will work the best.
  • Also the recipe calls for parchment paper on the cookie sheets. I didn’t do this and there was no issue. So if you don’t have it don’t stress over it.
  • Don’t skip the chilling step this helps your dough from not sticking…yep I tried to take a short cut but it didn’t work. 
  • As you can see I didn’t measure my cutting and just free handed it because I didn’t need a certain amount. Some were big and some were small. If you’re looking to get a lot out of your dough make sure to cut them to a smaller size. I only got 28 cookie sticks out of my dough.

Christmas Cookie Sticks

Yummy chocolate chip cookie sticks with chocolate drizzle and Christmas sprinkles!
Course Dessert

Ingredients
  

Dough

  • 1 cup butter very soft (almost melted)
  • 1 cup sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • ½ tsp almond extract
  • 3 cups flour
  • 1 tsp baking powder
  • cups mini chocolate chips

Topping

  • cup white chocolate chips
  • cup dark or milk chocolate chips
  • sprinkles

Instructions
 

  • Cream butter and sugar in a large bowl.
  • Beat in egg, vanilla and almond extract.
  • Stir in flour, baking powder, and chocolate chips.
  • Cover dough and chill for at least 30 minutes.
  • Preheat oven at 375 degrees F
  • Roll dough out on a lightly floured surface to a rectangle shape that is about 1/4" thick. Use a knife or pizza cutter to cut the dough into strips about 1" by 4"
  • Place strips on parchment lined cookie sheets and back at 375 for about 8-10 minutes. Or until lightly browned on the bottom edges.
  • Let sit on pans for a couple minutes, then remove to cooling racks.
  • Cool cookies completely.
  • Melt each of the chips in a ziplock bag in the microwave at half power. Snip the corner and drizzle over the tops of the cookies. Add Sprinkles.
