Crockpot Enchilada Chicken

Ingredients:

  • 3 or 4 large chicken breast
  • 1 can (19oz) Enchilada sauce (Red or Green works for this recipe. I used red sauce)
  • 2 cups cheddar cheese
  • Tortillas for serving

Directions:

  1. Place the chicken breast into your crockpot and pour the enchilada sauce over the top.
  2. Close the lid and cook on low for 3-4 hours or until chicken is tender and shreds easily.
  3. Once the chicken is done, shred it with a few forks and mix in 2 cups of cheese.
  4. Let sit for a few minutes to thicken.
  5. Serve on a tortilla
