Crockpot Enchilada Chicken

Ingredients
  

  • 3 or 4 Large chicken breast
  • 1 19oz Enchilada Sauce Red or Green
  • 2 cups Cheddar Cheese
  • Tortillas

Instructions
 

  • Place the chicken breast into your crockpot and pour the enchilada sauce over the top.
  • Close the lid and cook on low for 3-4 hours or until chicken is tender and shreds easily.
  • Once the chicken is done, shred it with a few forks and mix in 2 cups of cheese.
  • Let sit for 10 min to let the sauce get thicker.
  • Serve on a tortilla.

Notes

Nachos: This chicken is perfect to top some chips for nachos. Make it a fun dinner by creating a nacho bar where everyone picks their own toppings.
Rice Bowls: Steam up some rice and make your own chicken enchilada bowls at home. Top with all your favorite toppings! Get that take out feeling but half the cost. This is my favorite way to enjoy this recipe.

Enchiladas: Rolls up the chicken into a tortilla top with more sauce and you have a tasty easy Enchilada
Chicken Taco Salad- This was delicious the next day. Cold chicken on a salad topped with tomatoes and crushed doritos.
