Mexican Chicken Casserole:

This recipe is incredibly easy to make, which makes it perfect for those hectic weeknights or let’s be honest, any night you just don’t feel like cooking. With a few simple shortcuts and minimal prep, you can have a warm, flavorful meal on the table without the stress.

What you need:

  • 2 lbs Chicken breast (4 small or 3medium). A way that you can make this step quicker is buying pre cooked chicken. We will be cutting it up so size won’t matter.
  • Salt And Pepper
  • Shredded Cheese
  • Sour Cream
  • Diced green chili’s. For a mild flavor use 1 can of chili instead of 2.

Time to Prepare your Casserole:

  1. Preheat your oven to 400
  2. Spray a 9×13 pan with Cooking spray
  3. Dice up your chicken. Season with Salt and Pepper to taste.
  4. In a skillet over medium heat add oil. Add you chicken when oil is hot. Cook till your chicken is fully cooked.
  5. While the chicken cooks mix together your Cheese (4 oz.), 1 cup sour cream and 2 cans of can of green chili’s with the juice
  6. Add your cooked chicken to your 9×13 pan.
  7. Spread your sour cream mixture over the chicken. Top with the rest of your cheese.
  8. Bake uncovered for 15 min or until your Cheese is melted and sauce is bubbling at the edges.
  9. Top with your favorite toppings.
