Mexican Chicken Casserole

- 2 lbs chicken breast (diced) 4 small chicken or 3 medium
- 1 tsp salt or to taste
- ¼ tsp black pepper or to taste
- 1 cup shredded cheese
- 1 cup sour cream
- 14 oz Diced green chilis (Don't drain)
Toppings
- Avocado
- Lettuce
- Tomatoes
- Cilantro
Preheat your oven to 400 °F
Spray a 9×13 pan with Cooking spray.
Dice up your chicken. Season with Salt and Pepper to taste.
In a skillet over medium heat add oil. Add you chicken when oil is hot. Cook till your chicken is fully cooked.
While the chicken cooks mix together your Cheese (4 oz.), 1 cup sour cream and 2 cans of can of green chili's with the juice
Add your cooked chicken to your 9x13 pan.
Spread your sour cream mixture over the chicken. Top with the rest of your cheese.
Bake uncovered for 15 min or until your Cheese is melted and sauce is bubbling at the edges.
Top with your favorite toppings.
