- 1 pound Italian Sausage Casting removed if using sausage links
- 1 Onion diced
- 2 cloves garlic
- ½ tsp ground fennel (optional)
- ½ tsp red pepper flakes (opitional)
- 4 cups chicken broth
- 1 can` 14.5 oz petite diced tomatoes
- 8 oz. Ditalini pasta
- 1 tsp. Italian Seasoning `
- ½ cup Grated Parmesan Cheese
- 4 oz. Cream Cheese (warmed)
- ½ cup Heavy Whipping Cream
- Salt and Pepper (to taste)
- 1 tbsp Parsley Chopped (optional)
Cook the sausage and onion in a large saucepan until cooked. Drain any excess grease.
Add in garlic along with the ground fennel and pepper flakes. Mix and cook until fragrant.
Now add in broth, tomatoes, pasta, and italian seasoning. Bring to a broil. Reduce heat and simmer until pasta is cooked to al dente. About 6-8 minutes
Add parmesan cheese, cream cheese and heavy whipping cream. Let the cheeses melt into the soup for 3-5 minutes.
Season with salt and pepper to taste. Mix in the parsley and enjoy!
