Taco Pasta Salad

Ingredients
  

  • 1 lbs. uncooked pasta
  • 1 lbs. ground beef
  • 1 oz. taco seasoning
  • 2 cups tomatoes chopped
  • 2 cups cheese shredded
  • 15 oz canned black beans rinsed and drained (optional)
  • 15 oz canned corn drained
  • ½ small red onion chopped finely
  • 1 cup French dressing
  • ¼ cup mayonnaise
  • 2 cups Doritos crushed

Instructions
 

  • Cook the pasta according to the package directions. Drain and rinse under cold water. Drain well and set aside.
  • In a large skillet over medium high heat, brown and crumble the ground beef until no longer pink. Drain the grease.
  • To your meat stir in the taco seasoning. Allow to cool to room temperature.
  • In a large bowl, add the drained pasta, taco beef, tomatoes, cheese, black beans (optional), corn and red onion.
  • In a small bowl whisk the French dressing and mayonnaise, then pour on top of the salad. Toss to combine.
  • Let chill for 1 hour before serving.
  • Right before serving, fold in the crushed Doritos so they stay crunchy.
