  • Taco Seasoning

  1. Cook the tortellini

Cheesy Beef Enchilada Tortellini

Ingredients
  

  • 1 tbspo 9oz. Cheese Tortellini
  • 1 lb. Ground beeg
  • 1 Onion (small) Chopped
  • 2 Cloves Garlic Minced
  • 1 Taco Seasoning Packet
  • 10 oz Can Enchilada Sauce Red or Green
  • 1 cup Mozzarella Cheese Shredded
  • 1 cup Cheddar Cheese Shredded

Instructions
 

  • Cook tortellini according to package directions. Drain and set aside.
  • Brown ground beef in large skillet over medium heat, breaking apart while cooking. Drain excess fat.
  • Add onion and garlic to beef. CooCook 2-3 minutes until onion softens.
  • Add in Taco Seasoning. Cook 1 minute to let seasoning cook into the meat.
  • Add enchilada sauce and simmer for 5 minutes. Add cooked tortellini and toss to coat.
  • Top with mozzarella and cheddar cheese. Cover and cook on low fofor 2-3 minutes until melted.
  • Removed from heat, garnish with sour cream and cilantro. Serve hot.
